EAT: Dan Dan Noodles 擔擔麵

Dan Dan noodles are a classic Chinese Sichuan (Szechuan) dish. The quite-spicy dish pairs a spicy sauce (Sichuan peppers, chili oil, vinegar, minced pork, scallions) with wheat-flour noodles. They’re pretty easy to make at home but the to-go version is hard to pass up. I love to add them on to a larger order of less spicy foods.

At home, try this recipe from Bon Appetit. If you’re in Chicago, my favorite two places for Dan Dan noodles are Lao Ma La (pictured pre-mixed above; after mixing, below) and Lao Sze Chuan.
