
I had a fabulous brunch at TART over by the Farmer’s Market a few weeks ago and finally getting around to posting photos.

Ingredients:
4c Cooked Mash Potato
3tbs Diced Red Onion
3tbs Chopped Cooked Bacon
3tbs Shredded Cheddar Cheese
2tbs Sour Cream (to top the Croquettes)
4tbs chopped chives (set 2tbs aside)
2 Eggs
1 1/2c Flour (set 1c aside for breading)
1c Bread Crumbs
Egg wash- 3eggs beaten together with 2tbs of water)
Salt & Pepper to Taste
Procedure:
Place the red onions in a small pan and sauté with vegetable oil until soft, and then set aside to cool. In medium bowl combine the mash potatoes, bacon, cheese; chives, eggs, and cooled onion mix well with your hands just till all ingredients are incorporated. Then add the flour and mix until fully incorporated. Form into 2-3oz patties. Then bread each Pattie and set aside. In a medium non-stick pan over medium-high heat put vegetable oil around the pan and place the patties; (do not overcrowd the pan) cook until golden brown on both sides place on a platter and top with the sour cream and remaining chives.
Breading Process:
Place flour in 1 container, the egg wash in another and the bread crumbs in another. Place the croquette in the flour then the egg wash then the breadcrumbs patting to bind the breadcrumbs to the Pattie and set aside.
